Welcome to Tofu and Manna!

The purpose of this website is to provide information and encouragement about the benefits of eating a whole foods, plant-based diet. We share our personal experiences and knowledge we've learned from other experts in hopes that you might feel motivated to try a plant-based diet for yourself.

To learn more about where we started (as meat-eaters wandering aimlessly through the mass of confusing information and advice on how to be healthy) to where we ended up (watching Forks Over Knives and making the decision to try a plant-based diet for one month), please read our first post here. Our decision to try a plant-based diet has forever changed our lives, our health, and our future. We believe you too can experience the same improvements to your health if you are motivated enough.

Why Plant-Based?
The Standard American Diet is a disease-promoting diet. The high amounts of fat, refined sugar, and processed foods lead to heart disease, obesity, diabetes, and cancer, in addition to less serious health conditions. As more and more of these diseases occur, the more tempting it is to assume that this level of health is “normal.”

But it is not normal. You do not have to settle for a life of medication, surgery, pain, and disease. You are more in control of your personal health than you may realize. Genetics and family history are not necessarily your fate. Break out from the “normal” and take control of your own health. Not only your life, but your QUALITY of life, depends on it.

A whole foods, plant-based diet is the healthiest diet for everyone, at any stage of life - from prenatal to elderly. Not only can a plant-based diet relieve you of the leading-causes-of-death diseases like heart disease, cancer, and diabetes, but it can also alleviate less serious health conditions:

  • Arthritis/joint pain/osteoporosis
  • Asthma
  • Chronic infections (ear, sinus, UTI, etc.)
  • Depression/poor self-esteem
  • Headaches or migraines
  • Heartburn or acid reflux
  • High cholesterol/blood pressure
  • Irritable bowel, diverticulitis, ulcerative colitis
  • Overweight/obesity
  • PMS, hormonal imbalances, or infertility
  • Poor circulation
  • Seasonal allergies
  • Skin conditions (acne, eczema, keratosis pilaris, psoriasis)

About Me
I’m 31 and happily married to my husband, Michael, of 8 years. We currently have a daughter and six “pet children”: Ginger, Abby, Lexy, Hershey, Ethel, and Maddi. We adopted a plant-based diet in October 2012 and I have personally benefited from many health improvements:
  • Lost 35 lbs
  • Eliminated lifelong battle with Irritable Bowel Syndrome
  • Increased energy and mental clarity
  • Lowered cholesterol
  • Eliminated acne
  • Hormones balanced out naturally, without medication or supplements
